Dec-07 Texas Chili:  Modified for Barn Road Kill Chili
                                             Serves around 24?
4    lb Smoked Beef Brisket or Ground Chuck
1 1/5 lb Any Sausage or kabasa - Browned then Sliced Thin
2    lb Hot Italian Sausage - Browned & then  Sliced thin
6    med Onion - Course Chopped - (or more to taste)
2    Lge Yellow or Red Peppers (Sweet)
 1/2 cup Chili Powder
2    tsp Smoked Salt (Spice Island!)  Check for salt before adding!
5 - 6 tbls Dark Brown Sugar  (Cuts the acid)
 3/4 tsp Black Pepper
17    clvs Garlic - crushed or diced
6    tsp Cumin
3    tsp Dried Basel
5    can Peeled Tomatoes (28oz)
4    can Tomato Sauce (15oz)
2    can Beef Broth (15 oz) or  Beef Granules & Beer
 1/2 tsp Cinnamon
7    Green Jalapenos diced less seeds
 1/2 Cup Cheap Sherry
Brown Ground Beef  and Sausage
(Remove excess Grease) (Hint let Sausage cool before slicing)
Stir in remaining Ingredients and simmer 6 - 24 Hrs
*** Add following last hour of cooking
2 cup Sour Cream - before serving
5 can Pinto Beans (Drained)
1 can Black eyed peas (Drained)
2 can Corn (Drained Optional)
2-Jan tsp Texas Pete at last min to taste -  Not too Much!!!
I like my chili thick enough to eat with a fork (Not Watery!)
Add another can of beer if too thick.
